As winter lingers and the embers burn low, Winter’s Edge is a celebration of transformation—of deep, smoky warmth and slow, patient fermentation, but also of the first whispers of new beginnings.
This is a feast shaped by the season, where fire intensifies, fermentation deepens, and the last of winter’s larder is honoured. Expect bold contrasts: the crackle of flame against the delicate sharpness of preserved citrus, the umami depth of long-aged ferments against the fleeting brightness of the first greens pushing through the frost. Roots, grains, and fire-charred brassicas meet the vibrancy of pickles, vinegars, and preserved fruits—each bite a reminder that even in the coldest months, life is still fermenting, transforming, and evolving.
Seated at long, communal tables, this is a night of storytelling through flavour—where time-honored techniques meet the unexpected, and where we savour the past while looking ahead. Winter still holds its grip, but Spring is just beyond the horizon.
The menu through the evening is a journey through the last of the winter's bounty and includes:
